Vacuum Cookery
Born in Barcelona in 1962, Tony Botella’s career has been linked to the Ampurdán, where he started out in the world of cooking and planned his first projects as a restaurateur. After returning to Barcelona at the beginning of the 90s, he became had a fruitful relationship with the Paradis group, which lasted until 2001, when he decided to go it alone. In collaboration with Elvira Matas, Director of the Catalan Association for Alimentary Hygiene, he devoted himself to his great passion, vacuum cookery, a subject on which he has given courses and seminars throughout the world. The high level of interest which this technique has given rise to has led him to devote himself exclusively to it since 2005.
